There are few cocktails that are more refreshing than the light, gentle fizz of a summer Spritz. And as cocktail drinkers continue to look for simple home serves at the bar — the Spritz category looks set to sparkle in 2022.

Inspired by the classic Italian refreshment — the modern Spritz has evolved into a versatile serve that comes in many flavours and varieties. 

Nowadays, it’s not unusual to see a bitter liqueur swapped for a sweet one, a still wine swapped for sparkling, or the addition of extra ingredients. 

Including them as part of your offering is easy — we’ve pulled together 7 Spritz recipes that make a refreshing addition to your cocktail menu. 


1. Pimms Royale

Joyous passion fruit, laced with strawberry and fizzy ginger — the Pimm’s Royale is a classic summer punch that’s perfect for sharing. 

Made from scratch:

  • 100ml Pimm’s
  • 100ml FUNKIN COCKTAILS Passion Fruit Purée
  • 25ml FUNKIN COCKTAILS Sugar Cane Syrup
  • 5 strawberries
  • Top with ginger beer

Quicker serving:

  • 100ml Pimm’s
  • 300ml FUNKIN COCKTAILS Passion Fruit Martini Mixer
  • 5 strawberries
  • Top with ginger beer

Method:

Build in a carafe over ice and serve with wine glasses (serves 2-3 portions).

2. Honey Blossom Fizz

Characterised by its sweet overtones and citrusy undertones — the Honey Blossom Fizz combines honey, passion fruit and citrus with soda water.

Made from scratch:

  • 50ml Jack Daniel’s Honey
  • 25ml FUNKIN COCKTAILS Passion Fruit Purée
  • 15ml FUNKIN COCKTAILS Grenadine Syrup
  • 25ml FUNKIN COCKTAILS Pure Pour Lime
  • Top with soda water

Quicker serving:

  • 50ml Jack Daniel’s Honey
  • 50ml FUNKIN COCKTAILS Passion Fruit Martini
  • 50ml FUNKIN COCKTAILS Strawberry Woo Woo
  • Top with soda water

Method:

Mix ingredients in a highball glass and top with soda water. Serve garnished with edible flowers or citrus.

3. Aperol Hiball

A beautifully balanced fusion of sweet passion fruit, bitter lemon and Aperol, topped with a splash of prosecco. The Aperol Hiball is a tropical twist on an Aperol Spritz.

Made from scratch:

  • 15ml Passion Fruit Liqueur
  • 35ml Aperol
  • 15ml FUNKIN COCKTAILS Passion Fruit Syrup
  • 25ml FUNKIN COCKTAILS Pure Pour Lemon
  • Top with prosecco

Quicker serving:

  • 15ml Passion Fruit Liqueur
  • 35ml Aperol
  • 75ml FUNKIN COCKTAILS Passion Fruit Martini Mixer
  • Top with prosecco

Method:

Mix ingredients in a highball glass and top with sparkling wine or prosecco. Garnish with orange zest oils.

4. Chica Chew Fizz

Vibrant in colour and in flavour — the Chica Chew Fizz is a playful combination of bubblegum and citrus lemon topped with refreshing soda water. 

Made from scratch:

  • 25ml Vodka
  • 25ml Blue Curacao
  • 25ml FUNKIN COCKTAILS Bubblegum Syrup
  • 25ml FUNKIN COCKTAILS Pure Pour Lime
  • Top with soda water

Quicker serving:

  • 25ml Vodka
  • 25ml Blue Curacao
  • 25ml FUNKIN COCKTAILS Bubblegum Syrup
  • 100ml FUNKIN COCKTAILS Margarita Mixer
  • Top with soda water

Method:

Build and stir. Serve garnished with a cloud of candy floss.

5. Poshest Bellini

A peachy body, laced with aromatic Seville oranges, sharpened with Calvados and topped with prosecco. This isn’t a posh Bellini — it’s the Poshest. 


Made from scratch:

  • 25ml FUNKIN COCKTAILS Peach Purée
  • 25ml Calvados
  • 15ml FUNKIN COCKTAILS Oleo Saccharum Syrup
  • Top with prosecco

Method:

Build and stir. Serve garnished with study citrusy herbs (e.g. lemon thyme).

6. Ruby Spritz

An uplifting blend of rhubarb sherbet, cranberry, lime and soda water — the Ruby Spritz contains a balanced burst of flavours for a super refreshing cocktail.

Made from scratch:

  • 25ml Funkin Rhubarb Syrup
  • 35ml Cranberry Juice
  • 25ml FUNKIN COCKTAILS Pure Pour Lime
  • Top with soda water

Quicker serving:

  • Top with soda water

Method:

Build and stir. Serve garnished with rhubarb or edible paint.

  • Top with soda water

  • Top with soda water

Method:

Build and stir in a flute glass. Garnish with lemon zest.
